NAAM PRIK KAENG CHU-CHI
Chu-Chi Curry Paste
INGREDIENTS:
10 Dried red chilies (soak and remove seeds)
14 bulbs. Shallot-sliced
20 cloves Garlic-smashed
2 tbsp. Lemon grass-sliced
2 tsp. Galangal-Sliced
2 tsp coriander roots
1 tsp. Kaffir lime zest
1-2 tsp. Shrimp paste
How To Prepare:
Place all ingredients except shrimp paste in mortar and pound until ground and mixed thoroughly. Then add shrimp paste to finish.
