Mussaman Curry Paste
INGREDIENTS:
7-8 Dried red chili (remove seeds) soak in water if dried peppers till soft
6 tbsp. Sliced shallot
3 tbsp. Sliced garlic
2 tbsp. Sliced lemon grass
1 tsp. Salt
1 tbsp. Shrimp paste
10 Black peppercorns
1 ½ Nutmeg
2 Star anise
2 tbsp. Coriander seed
1 tbsp. Cumin
HOW TO PREPARE:
Roasted all the ingredients (except chilies, shrimp paste, salt and pepper) in frying pan, and then pounded all together.
