NAAM PRIK KAENG PHET


INGREDIENTS:
5-6              Dried big red chilies (remove seeds)
5      bulb.    Shallot-sliced
10    cloves. Garlic-sliced
2      tbsp.    Lemon grass-sliced
2      tsp.      Galangal-sliced
1      tbsp.    Kraffir lime zest out side skin
1      tsp.      Coriander root
1      tsp.      Coriander seed-roasted
1      tsp.      Cumin roasted
½     tsp.      Nutmeg
1      tsp.      Salt
1      tsp.      Shrimp pasted
12                Black pepper corns

HOW TO Make:
Place ingredients in mortar and pound until ground and mixed thoroughly or use blender.

note: To remove seeds from dried red peppers is easiest to soak chillies till soft then slice vertically and remove seeds.
