NAAM PRIK PHA-NAENG Pha-Naeng Chilli Paste
INGREDIENTS: 6-7 Dried red Chili (remove seeds) 5 bulb. Shallot-sliced 10 cloves Garlic-sliced 1 tbsp. Lemon grass-sliced 1 tbsp. Galangal-sliced ½ tbsp. Kaffir lime (zest)out side skin 1 tsp. Coriander root sliced 1 tsp. Salt 1 tsp. Shrimp paste 5 White or Black peppercorns
HOW TO COOK: Place spice mixture ingredients in mortar and pound until ground thoroughly.
