PAT KEY MAOW Stir-Fried Noodles (Drunken Style) This is a classic spicy dish best served with lots of whiskey to cool the pallet. INGREDIENTS: 2 tbsp. Vegetable oil 2 tbsp. Fresh yellow spur chili pepper 3 tbsp. Chopped garlic ¼ cup Sliced onion 150-200 gms. Ground beef, pork, or chicken 1 cup Large Rice noodles, soaked and drained 1 tbsp. Fish sauce ½ tsp. Granulated sugar 1 tbsp. Oyster sauce ½ cup Sweet basil or hot basil leaf
HOW TO COOK: 1. Pound with mortal and pestle (or you can use a food processor) chili peppers and garlic into paste and fry at high heat in large frying pan. Add onion before paste starts to brown. 2. Add ground meat, and the rest of ingredients stirring constantly. 3. Add noodles when meat cooked, add basil leaves and toss. 4. Serve immediately.
